Champagne Cocktail, clementine, pomegranate and limoncello (for 2) - 250 ml (25 cl) of Champagne or good sparkling wine from Alsace very cold - 1 ripe pomegranate (for juice, about 100 ml) - 150 ml (15 cl) of clementine juice just squeezed - 20 ml limoncello - 2 tablespoons lemon juice just squeezed - 2 rounded tablespoons brown sugar (or sugar syrup to taste) Cut the pomegranate into two, keep a few grains to the stage and the press juicer for about 100 ml of juice. Combine clementine juice, pomegranate, lemon and limoncello. Add champagne and cane sugar and mix. Serve immediately with ice or keep in the fridge covered up half an hour before serving.
